Veggies

So recently my roomie and I have decided to try and be vegetarian for a month. I don't really like meat much and I think my body would be happier if I cut them out. Plus, I have been reading so much about how they are stuffed full of growth hormones and it can't be healthy to be eating chickens that have never even seen daylight. I'm not doing it because of PETA, a big part of my research does animal testing. I started watching Food Inc. and that definitely makes me not want to eat meat. It's crazy how much control these big companies have over our entire food industry.

Any tips? I know I need to eat a lot of veggies, I eat a lot of eggs and make sure I keep my bean intake up a lot and I've been hearing a lot about quinoa. I want to try it. I figure after a month I'll eat meat occasionally. But I guess that I will see how it goes!
